In preparation for the 2008 Telluride Noel Night, my daughter Maile and I baked up some of our delicious Daddy Cakes® cupcakes, to give out as samples. We made these with our Better Batter Buttermilk, Blueberry Bonanza Blast & Sensuous Strawberry Sensations baking mixes. Daddy Cakes mixes are versatile and can be used for many recipes that reach beyond pancakes, waffles, cupcakes, cobblers, muffins, scones, and more (We just had a Chef tell us that they use our Blueberry Bonanza Blast mix with breakfast sausage. Place corndog style stick in pre-cooked breakfast sausage, dip sausage in batter, fry in Canola oil until batter is done. Let cool then serve with Maple Syrup)
We made no modifications to the recipe. I did spray the insides of my cupcake liners with a very small amount of Pam Nonstick Spray to prep and ensure that the cupcakes came out of the liner real easy. Just add water to the mix till it's a nice pourable consistency, pour into cupcake liner about three quarters of the way full and bake at 350 degrees for fifteen minutes.
We made a simple homemade vanilla icing and added heavy whipping cream as well as lemon zest.
I was the icing spreader and Maile was the sprinkle master.
The cupcakes didn't last long. Tom Connor at The Panhandler was last seen pushing this small boy pictured here to get one... No children, animals or innocent bystanders were injured in the making or eating of these tasty Daddy Cakes® Cupcakes.
