It is somewhat surreal to me that Daddy Cakes pancake mixes can be doing so well while so much of the economy is stalling. The New York Times just reported the other day that like Daddy Cakes Pancake Mixes, Spam, the wonderful meat in a can is seeing its sales increase. Blame the economy, where diners are looking for cheap ways to put meat on the kitchen table. Or on the restaurant table.
Other thrifty foods that are selling well across the country, many of which will fill you up, according to the Times story, include rice, beans, macaroni and cheese, instant potatos, and beer.....now this sounds like a interesting dinner party menu!

Our growth is not entirely without regrets for many people are loosing their bakeries and cupcake shops while the pressures of a downward trending economy and rising baked goods ingredient costs also soar higher and higher. We have had two cupcakeries close down in our area in the last several months as they just couldn't make enough to offset all of their business expenses. Could this stark economy spell "doom and gloom" to the decadence of the cupcake rave as people move towards a more frugal period? Will cupcakes be replaced for now by the Costco size flat cakes as people need quantity over quality? There's a restraruant near us that has a blackboard outfront that reads "If you don't eat, We both starve"...how true.
The Consumer Price Index (CPI) for all food is forecast to rise four-to-five percent in 2009, according figures from the USDA's Economic Research Service. These above-average changes in food price indices are on top of a forecast CPI increase of 5.5-6.5 percent for 'food at home' in 2008 and a final 2007 increase of 4.2 percent. The highest price increases for 2008 are for eggs, fats and oils, cereals and bakery products, and dairy products.

Also, have you tried the Pepper Bacon from Sam's Club? I went on a fly fishing trip with a group of guys in May and I still think that is the best bacon that I have ever had....seriously it's great bacon!
